A 7 ft 10 in plywood pram from Glen-L Marine that folds or takes apart across the middle, so a small cruiser can stow a tender that would otherwise not fit. Each half is light to carry, the mast on the sailing version can be made in two pieces, and it rows, sails or takes a 3 hp outboard.
Simple and cheap: no lofting, no building form, no frames. A beginner should allow 50 to 100 hours, more with the sailing rig, for which Glen-L sells hardware and sails. Medians from logged builds are below.
